Do I have to refrigerate tallow?
You don’t need to refrigerate tallow if it’s kept in the glass container with the lid on, kept cool and away from light; it’s shelf-stable for months at room temperature. Refrigeration or freezing is optional and only needed for longer storage. It's softer when left unrefrigerated.
What is beef tallow?
Beef tallow is purified, rendered beef fat, usually from the fat around a cow’s organs or trim, that’s melted, strained, and cooled into a firm, whitish cooking fat used for frying, roasting, and baking. At WhoaNelly's, we only use kidney fat as it's the purist and highest quality.
Can I bake with tallow?
Heck ya! Tallow works well in baking and can replace butter or shortening in savory biscuits, pie crusts, tortillas, and some cookies. Use it solid for flaky doughs and melted for batters.
Why is suet or better known as kidney fat the best?
Suet (kidney fat) is prized because it’s very pure, low in connective tissue and moisture, and unusually high in stearic acid, so it renders into more white, clean‑tasting, firm, high–smoke point tallow. It's often used for skin care too!!
Is tallow good for you?
You bet it is. Tallow contains fat-soluble vitamins A, D, E, and K, plus some choline which is an essential nutrient that helps build and maintain cell membranes and supports liver fat metabolism. Do keep in mind that tallow plays the role of a healthy cooking oil unlike seed oils, and not a primary source for daily nutrients.
Can I reuse tallow after frying?
Yes, you can reuse tallow after frying. Let it cool slightly, strain out food bits through a fine sieve or coffee filter, then store it covered. However, we do recommend using fresh tallow as there are risks involved if you don't strain it properly or contaminate it with other ingredients.
